Happy Yorkshire day, Carrwood Parkin

Today is Yorkshire day. Welcome!

The Carrwood team set out this morning with some Yokshire goodies including some absolutely delicious Parkin. Hats off to the chef!

It was so delicious we posted the recipe for you so you can enjoy it and gorge yourselves at home as well as at work.

 


 

  • 110g soft butter
  • 110g soft dark brown sugar
  • 55g black treacle
  • 200g golden syrup
  • 225g medium oatmeal
  • 110g self-raising flour
  • 2 tsp ground ginger
  • 1 tsp ground mixed spice
  • 2 medium eggs, beaten
  • 1 tbsp milk
  • Pinch of salt

 

Preheat your oven! 140c/120c with a fan. Ideally you will need a 20cm square cake tin.Melt the butter, sugar, treacle and golden syrup in a pan slowly. Slowly. You don't want the mixture to burn so don't let it bubble or get over heated! Allow to cool once it is all melted.

 

Sift your flour and add with the rest of your dry ingredients. Make a well in the centre and add in your delicious sugary mixture. Fold this together. Pour in your beaten eggs and milk and continue mixing. 

 

Pour into you baking tray and bake for 1 1/2 hours. Keep an eye on it so it doesn't get over cooked and dry. 

 

When you take it out of the oven, leave cooling for 20mins. Tip onto a drying rack and leave to cool completely. (This stage is the hardest part, that smell is too tempting)

 

Store in an air tight tin. Leave for at least one day, if not a week to get it lovelier and tastier. mm mmm
